    The Age of Food Abstract: Dramatic evolution in the global diet, cuisine and consumer preferences will, over coming decades, change the foods we eat more profoundly than at any time in history.  Driven by emerging scarcities of land, water, oil, nutrients, fish and extinction of the climate that gave rise to agriculture, what we eat a century from now will bear little resemblance to what we eat today.
