South Korea Update and Enhance their Judging Skills

The Korean Cooks Association, IKCA, held their 1st WACS endorsed judging seminar conducted by WACS Culinary Committee member Rick Stephen in Seoul between 30th April and 1st of May 2011.

A number of chefs had traveled from as far as Daejeon to the seminar along with some chefs from the LTB, the format started at 9am in a very well laid out class room style with plenty of room and information sharing.  The whole idea was to bring Sth Korean chefs up to speed with the new WACS rules in preparation for their own competitions and also to enhance their program for the WACS Congress in 2012.

Day 1 was the theory class for all and then some judging practice from the photo collection from the recent World Cup in Luxembourg. The class was broken into group as simulated in real when judging, and towards the end of the day a written exam all in English was taken.

Day 2 of the seminar the group came together to discuss any issue as most had studied over night and even translated the notes into Korean, after 2 hours of re-capping then actual teams were formed for the real judging experience. A full cold buffet table had been set, by the Sth Korean National Team, along with a number of individual cold items, and the two Korean entrants in the Global Chef and Hans Bueshkens for the 16 trainee jury members to judge.

WACS Culinary Committee instructor Rick Stephen said that he was extremely happy with the workshop, the knowledge that was gained and shared among all, and especially the organization of the whole event, which has the WACS Congress in good steed for 2012. Sth Korea’s President Nam and his colleagues who were in attendance were very excited  when WACS President Gissur made an un-announce phone call to the seminar as they were winding up on day one of the procedures.
