The Emirates Culinary Guild The Emirates Culinary Guild (ECG) is the UAE’s association of professional chefs. It is a non-profit-making organisation dedicated solely to the advancement of the culinary art of the UAE. The World Association of Cooks Societies (WACS) is a 102nation fellowship comprising the world’s various professional chefs’ organisations. The ECG received its charter into WACS at a ceremony in Stavanger, Norway on June 28, 1994, during the WACS 26th World Congress. WACS endorses the ECG as the authorised UAE culinary institute. The ECG, thereby, has an international culinary focus and multi-national support for the staging of its various competitions, seminars and events. The aims of the ECG, broadly, are: - To encourage and inspire junior chefs through training and competition. - To enhance internationally the culinary prestige of the UAE. - To encourage UAE nationals to consider a career within the hospitality industry. The ECG’s competition calendar is spread over a two-year period. Within each period, as an absolute minimum, the Guild will organise:The Young Chef of the Year Practical Cookery Competition,The Emirates Salon Culinaire at the Gulf Food Exhibition, La Cuisine by SIAL at SIAL Middle East and The East Coast International Culinary competition. Competitors entering the various competitions can qualify for inclusion into teams that travel to various countries to represent the ECG in international professional culinary competitions. The Guild also awards bursaries to some competitors to enable them to travel abroad and receive work experience in high-class establishments. In addition to the professional competitions and events, the Guild also liaises with Dubai Municipality and Government of Dubai Department of Tourism and Commerce Marketing in the organisation of various culinary expositions during the Dubai Shopping Festival and the Dubai Summer Surprises promotion. The highlight of the ECG’s competition calendar is the annual Emirates Salon Culinaire held in conjunction with the GulfFood and Equipment Exhibition at Dubai International exhibition Centre. The five-day culinary extravaganza comprises cookery demonstrations, live cooking competitions, live ice carving, buffet and banqueting showpieces, pastry showpieces and bakery and confectionery creations. The whole of the Emirates Salon Culinaire is an event dedicated to the celebration of food and its accoutrements displayed in all their pleasing forms. Entry to the salon competitions is open to all those professionally involved in the preparation of food, be it in hotels, restaurants, hospitals, the armed forces, police or other institutions. Membership of the ECG is open to all of those professionally and solely involved in the preparation of food. The Emirates Salon Culinaire (ESC) is a series of practical and display-based culinary competitions; entry to which is open to professional chefs, pastry chefs, cooks and bakers. Some of the competitions are designed for entry by a single competitor; others are designed as team events.


Each competition is called a class. Each class of the various competitions is intended to test the differing skills of entrants whilst also celebrating the preparation and presentation of food and its accoutrements in attractive and pleasing forms.


The team events are designed to test cooperative, gastronomic and artistic skills. The practical cookery events test gastronomic and timing skills. Artistic and timing skills are required for the practical artistic events. 


The salon takes place over five days at the Dubai International Convention and Exhibition Centre. It is run in conjunction with the annual Gulf Food Hotel Exhibition. The Emirates Culinary Guild (ESC) in its organisation of the salon is strongly supported by Dubai World Trade Centre Management Company (DWTC) in the provision of space, stand construction and logistics.


The exhibits at the salon act as a display for the UAE hospitality and food industry. They bring to the attention of the general public the service and food concepts and fashions currently prevalent within the region's hotels and restaurants.


To the professional chefs competing, the salon presents an opportunity for them to test themselves against the bounds of their perceived abilities, and to demonstrate to the public, their colleagues and their seniors the scope of their artistic acumen and practical dexterity.


Through the media of competition and exposition, the salon serves to inspire and encourage young chefs to continue striving for ever upward improvement in their daily work practice.


 


There are few things more stimulating or heartening than to receive tribute from one's respected peers and seniors. Accordingly the competitors at the salon are judged by a panel of 30 international adjudicators, each one of whom is an approved international judge of the World Association of Chefs Societies (www.worldchefs.org)


Entrants to the various competitions do not compete directly against each other; rather, they strive to reach perfection in their art. Each of their creations is then judged by the panel according to its international merit.


Gold, Silver and Bronze medals and certificates are awarded to those competitors whose exhibits, in the opinion of the judges, have reached the commensurate international standard. In addition to the medal awards, there are special trophies awarded to individuals who have attained excellence at the competition in their particular field: gastronomy; bakery/pastry; artistic - and a new award designed to encourage the development of Arabic cuisine.


To any member of the general public fortunate enough to observe it , the Emirates Salon Culinaire is a visual extravaganza of culinary showpieces and practical cookery demonstrations: exciting ice carvings; intricately decorated buffet platters; spectacular pastry and chocolate creations; pictureperfect, aspic-preserved, platters of all manner of edible delights: Wedding cakes; celebration cakes; works of genius in spun and blown sugar: in fact, a seemingly endless presentation of gastronomic masterpieces.


All this - coupled with four days of real-time, hectic, and thrilling cookery competitions - fought against the constraints of time, makes the salon a stimulating event that has become a major attraction at the Gulf Food, Hotel & Equipment Exhibition &Salon Culinaire.


Emirates Culinary is inviting all professional chefs to participate in the upcoming biggest culinary competition in the Middle East; The Emirates Salon Culinaire 2018. This event will be held in conjunction with Gulfood from 18th of February to 22 nd February 2018.


Attached are copies of the details of the event and the forms for entering for best trophy classes and individual classes.


Entry to the practical cookery classes will be restricted due to space being very limited. No entry is considered for registration without receipt of the required entry fee. Closing date for entries is 21st of January 2018.


However, many are often fully subscribed and closed well before the closing date.
