using innovative cooking technologies in honor of 150 years anniversary of establishment of diplomatic relations between Sweden and Japan.

We will showcase different ways of using new technologies such as vacuum cooking, cook chill system, smoking and pressing cooking to give a perfect result in cooking traditional Swedish dishes. This innovative approach also improves chefs’ daily activities, food cost and food waste.
